Grandma Newman's Waffles

Just in case I ever get another waffle iron

3 eggs, separated
1 1/2 C milk
1/2 C vegetable oil
1 3/4 C flour
4 t baking powder
1/2 t salt

whip egg whites
mix together all other ingredients (maybe mix dry ingredients together first)
fold in egg whites

Blueberry-Raspberry Muffins

From the One Bite Won't Kill You cookbook by Ann Hodgman

*Make half of the recipe for a dozen muffins. They are large and hardy so it will be plenty, even if you are giving them away.

2 C flour
2 t baking powder
1 t baking soda
1 t salt
4 large eggs
1 16 oz container sour cream
1 1/4 (that's 10 T) sticks unsalted butter
2 C light brown sugar packed
2 C rolled oats
1 C fresh or frozen (don't thaw) blueberries
1 C fresh or frozen (don't thaw) raspberries
sugar for topping if you are weird

Preheat oven to 375 degrees
Line 2 12 muffin tins with liners
melt butter and brown sugar, stirring to dissolve, let cool slightly
combine flour, soda, powder, and salt in a bowl
beat eggs and sour cream
beat brown sugar mixture in with egg mixture
stir in oats
fold in flour mixture
gently fold in berries

fill muffin cups 2/3 full with batter
drop generous pinch of sugar on top of each muffin
bake for 25-28 minutes until the edges are medium brown and tops are firm
cool for 5 minutes in pans then finish cooling on racks

A Tasty, Healthy, Simple Breakfast

 6 strawberries, sliced
1/2 cup blueberries
4 large spoonfuls vanilla yogurt
1/2 cup Fiber One cereal
ice cold water to drink

Pumpkin Bread - Better Than Any Candle

When my husband and I were first married and looking for our first home, we spent more time shopping for a town than a house. We have never regretted our decision. It is a great small town. 

Our first street was U shaped, so sort of a cul-de-sac but not quite. It was a great street with great neighbors. One of our neighbors came over and brought us some pumpkin bread. She also gave me the recipe!  I still use it today because it is so good and makes your house smell like heaven, thus explaining the title of this post. As a matter of fact, my husband's car had a cracked windshield, and the repair couple came today to fix it in our driveway. When I opened the door to sign the paperwork, they started raving about the smell (and maybe hinting a little, and I would have given them some if I had actually thought of it while they were here - I'm a little slow sometimes).

Without further ado:

Makes one 9x5 inch loaf

1 1/2 C flour
1 C packed brown sugar
1 C pumpkin (I used canned)
1/2 C (thus one stick) butter (unsalted is better IMO), softened
2 eggs
1 t baking powder
1 t baking soda (get mixed up between the two? have no fear, you need equal amounts of both!)
1/2 t salt
1 1/2 t ground cinnamon
1/2 t ground cloves
1/2 t ground ginger

Throw all ingredients in a large bowl and beat until well mixed.
Pour into a greased 9 x 5 inch baking pan (grease it with the wrapper from the stick of butter you used - easy!)
Bake at 350 for 45-55 minutes - check center with a toothpick
Cool in pan on a wire rack.

We are expecting lots of fun next week here in the Northeast - a hurricane mixed with snow? So I am doing some baking this weekend to make myself feel better because I most likely will be dealing with no power (and let's hope nothing worse than that) for a few days.

How About Some Tomatoes?

Another attempt to sneak in some healthy goodness to my otherwise high carb diet.
This morning a cut up some tomato and threw it in a pan, added an egg and scrambled.
I do not really like cooked tomatoes, but these were not in the pan very long.

Then I toasted a wheat bagel with one slice of cheese and made an egg sandwich.

Again, my usual choice would be a scrambled egg and a bagel, but throwing in the tomato took nothing away from the overall eating experience, and provided me with a serving of vegetables (well, probably half a serving).

Christy's Breakfast Cereal


I have tried to like oatmeal, but I just cannot stand the consistency of it.

(I even tried putting peanut butter and chocolate chips in it once. Yes, it was gross.)

I have also tried dieting many times and own numerous diet books.

Both of these factors lead to the discovery of my breakfast cereal.

One of my diet books (and if I could find it I would give proper credit)
had a recipe for homemade granola cereal, and this cereal stems from that idea:

@ 1/2 C rolled oats (I have quick cooking so that is what I use)
@1/4 cup dried fruit/fruit/nuts combo (I have a bag of trail mix leftover from something else and so that's what I am currently using)
skim milk
1/2 T maple syrup (not pancake syrup, but real maple syrup)

The oats are not cooked and they will soak up the milk so I use almost a whole cup of milk. Compared to other boxed cereals it is mushy. But, compared to cooked oatmeal, it so much better in my opinion. The maple syrup gives me the motivation to eat every last drop.
