Wow, it's been awhile. I had a good tax season - my mind was sharp, I worked hard, and prepared a lot of returns; but, it took all of my energy and I am just now getting some back. (Who am I talking to? My future self, for when I go to look at past menus and I ask myself why I never have anything for April and May!) I have been writing menus, just not posting them, and they often don't get used because we wind up not eating dinner, just having a salad, or getting takeout. So let's get started with a partial May menu.

20 Fri tacos (everything is in the freezer - leftovers from last time)
