Farm Stand Potato Salad

 We are trying to get away from mayonnaise based salads, and this potato salad, which comes from MyRecipes.com, is delicious. 

1 3/4 lb. fingerling (or small) potatoes, cut to bite size pieces
1 C sugar snap peas, trimmed
1 C broccoli florets
1/4 C diced red pepper 
1/4 C diced green pepper
1/4 C diced yellow pepper
1/4 C sliced scallions

Dressing:

3 T lemon juice
2 T olive oil
1 T Dijon mustard
1/4 t thyme
1/2 t salt
1/2 t celery seeds

Cook potatoes until tender, about 10 minutes.
Add peas and broccoli, cook for one minute.
Drain and add other salad ingredients
Whisk dressing ingredients, pour on salad and toss

Monthly Menu April 2021

 


There are a few positive things in my life that have come from this Covid pandemic. Finally keeping a full monthly menu is one of them! Another is getting my former job back via telecommuting. If I had my ideal work situation (and when do we ever get any ideal situation?), I would work 4 hours a day, Mon-Thur, for 40 weeks out of the year. Doesn't that sound  nice? Twelve weeks of vacation, plenty of time to do other things during the day, a three day weekend. Yes, that would be nice. Oh, and working from home. Maybe if the government staggered due dates, like the way car registration is here in Georgia - our registrations renew on my husband's birthday, so we have anytime between Jan 1 and his birthday to renew. Oh well, I guess my current work situation is the next best thing.

As long as my life keeps looking similar to this, I am  going to keep working on these menus. My goal is to use a particular recipe only once a month. Hahaha, we will see.

The Best Ever Meat Sauce

 This recipe comes from Belle of the Kitchen and it is so very good. The flavor is deliciously rich.


1.5 lbs ground beef
1 large onion, chopped
1 green bell pepper, chopped
2 cloves minced garlic (1 tsp)
3 15 oz cans diced tomatoes
1 6 oz can tomato paste
2 tsp brown sugar
1.5 tsp oregano
1 tsp salt
.5 tsp basil
.5 tsp thyme
bay leaf
2 cups beef broth

Brown ground beef, onion, and pepper
Add garlic, cook one minute
Add the rest of the ingredients
Bring to a boil, turn down and simmer uncovered 1.5-2 hours
